Heather's Killer Kale Salad
Heather's Killer Kale Salad... a great base salad you can add a protein too, other veggies, fruits, you name it... and it gets better on days 2-3-4!
I make it in bulk to have on hand as an entree or side salad!
2 large bunches of kale- tear leaves from ribs and chop chop chop.
Toss/massage with olive oil and lots of fresh lemon juice. I use 2 full lemons.
Sprinkle in dried chili pepper flakes
Add in toasted pine nuts or almonds.
Add dried currents.
Add fresh grated Parmesan.
Add coarse sea salt
